Ahoy Sailor! One week till we step foot on our sailboat...
Well, one week from today we will be on our own sailboat (our own for a week that is) in the warm waters of Bequia. Bequia is called The Big Little Island. It is seven square miles in size, and home to about 5000 people. It absolutely is the most friendly place I have ever been! Everyone smiles, and wishes you a "Good mornin'". If you are driving, you are waved at by the friendly locals. Amazing place to be sure!
I know this year will be different than we are used to - the economy hits paradise too. I just heard that one of our favorite restaurants in Grenada has closed down. It has been there for years - a tradition, and is a favorite of locals and tourists alike. Many restaurants are only opening for certain hours, or closing early for the low season. Sad...
But, paradise will still be paradise; the lovely beaches will be open; and we will adapt with the times.

Ten days till we leave for paradise...
In ten days we start our long adventure to paradise. In honor of our upcoming trip to the "Spice Island" (Grenada - the Spice Isle), I am reposting a recipe for Nutmeg Ice Cream. Summer is always a nice time for some homemade ice cream. (especially with this wonderful weather)
NUTMEG ICE CREAM - a delicious dessert you find in Grenada
1 1/2 cups milk
1 1/2 cups heavy cream
3 large eggs
3/4 cup sugar
1 Tbsp. freshly grated nutmeg - about 1 whole nutmeg
1/8 tsp. salt
1 tsp. vanilla
In pan, bring milk and cream just to a boil. Whisk together eggs, sugar, nutmeg, salt, and vanilla. Whisk 1/2 cup of the milk mixture into the egg mixture. Whisk the egg mixture into the remaining milk mixture. Cook over medium heat, stirring constantly, until 175 on a candy thermometer. Transfer the custard to a metal bowl and set it in a larger bowl of ice and cold water. Stir until the custard has completely cooled. Freeze the custard in your ice cream machine according to directions. Enjoy!
